Korean fermented soybean paste, called doenjang (된장), is more than just a seasoning or an essential ingredient in many iconic Korean dishes. It's impossible for us to imagine life without doenjang. Full doenjang recipe: 🤍 Salty, earthy, hearty, incredibly savory and delicious, it adds flavor to many dishes and makes them distinctively Korean. Making doenjang at home takes a long time, you have to be ready to commit to it for one year! It's not hard to make, but takes patience and some hard work, and some special equipment. I am still processing the events of the past week (i.e., James Beard Award). Shock, joy, pride, laced with heavy doses of imposter syndrome. After all, I have been a lawyer for most of my career. I only started cooking a lot in 2016, mostly because it was either that or stop eating Korean food (when I went vegan), which I simply refused to entertain. And I guess that’s where I land—my love of Korean food. My love for Korean people. . Whether it’s the sound of Korean being spoken in an airport or at the shopping mall, the whiff of doenjang that hits me when I go to another Korean person’s house, the sight of moon-white Jeju radishes waiting to be picked up at the Korean market… Whether it’s another article about BTS leveraging its army for justice, a photo of a Korean American senator picking up the shards of sedition, or a novel unapologetically featuring a Korean family in Queens, NY because WTF not? . Whether it’s the “sahk-sahk-sahk” of my mother’s knife as she insists on cutting up all the veggies for boochimgae in lieu of using the fancy food processor I bought her, the sight of lime green hobbahk from my Wehsoongmoh’s garden nestling inside some shin-moon because she wanted me to taste just how sweet the squash is this summer, or waking up at 3 in the morning with my entire family and screaming “BE THE REDS!!!” until my voice is hoarse while watching a sport in which I previously held zero interest… . Doenjang jjigae (soybean paste stew) [Ingredients] Soybean paste 1/3 cup (60g) Water 4 cup (750mL) Minced garlic 1/2 tbsp (8g) Anchovy for broth 10 pieces (20g) 1/2 summer squash (130g) 1/2 onion (80g) Oyster mushroom 1 cup (80g) Green onion 2/3 cup (60g) 2 Cheongyang peppers (14g) 1/2 red pepper (7g) Tofu 1/2 pack (180g) [Directions] 1. Cut summer squash, onion, and tofu into a decent size. 2. Tear apart oyster mushroom with hands. 3. Cut Cheongyang pepper, red pepper, and green onion at 1-cm thickness. 4. Remove the head and gut from anchovy and break into thirds. 5. Boil trimmed anchovy, water, and onion in a pot. 6. Once the broth boils, add oyster mushroom, summer squash, minced garlic, and soybean paste. 7. When the stew boils, add green onion, Cheongyang pepper, and red pepper. 8. Korean cuisine is by far one of my favorite types of cuisine (mainly because it is cooked with tons of veggies, cabbage and well, it is spicy). Living in Seoul for a year was so great cause I got to eat a lot of it everyday and since moving back home well, I miss korean food. [Anchor Lead] The fermented soybean paste doenjang, with its signature taste, is essential to Korean cuisine. Koreans say that when you lose your appetite, some green chilies dipped in doenjang will do the trick and restore your taste buds. Take a look. [Pkg] Sauce ripens under the clear blue sky. It's none other than doenjang, fermented soybean paste. The making of doenjang starts from meju which are blocks or lumps of fermented soybeans. [Soundbite] Kim Yeong-seok(Doenjang Manufacturer) : "The taste of doenjang is determined by the yearly temperature and the person making it." Meju blocks are first washed, removed of the rice straws and dust, and then dried. While they are being dried, brine is made. You can determine the perfect salinity of 18 degrees by floating a raw egg on the salt water and when the surface of the egg is just about the size of a 500 won Korean coin. [Soundbite] Kim Yeong-seok(Doenjang Manufacturer) : "Brine of low salinity gives doengang a sour taste while high salinity gives a bitter taste. The right level of saltiness makes good doenjang." Now place the meju blocks in jars and also put in some bamboo sticks to push down the meju so they won't rise. Then pour in the brine along with some dry peppers and charcoal. Close the lid and the meju will be fermented under the sun for 50 long days. After this time has passed, the meju is taken out of the salt water. The light brown liquid eventually becomes soy sauce or ganjang in Korean. And the solid parts turn into doenjang. The meju blocks are smashed apart by hand and go back into the jar. We need to wait another year for the doenjang paste to be ready for consumption. It would be wonderful to make doenjang this way at home but of course, it's not really feasible. It's commonly had at home (Every Korean fridge has a tub of the fermented bean paste) and also available at most Korean restaurants. It's has all the elements of a delicious stew - meat, mushrooms, veg, and fermented funk! What else do you need!?! The video recipe posted is a very basic, but also very delicious recipe. It's intended for the new home Korean cook or someone that just wants a quick, healthy, hearty meal. No extra time required making a stock/dashi or going out to the local fish monger for clams, shrimp, or squid that you might find in other more complex video recipes. Just some humble veggies and some beef is all you need. Hardest part, is going out and buying or ordering the paste. 😆 and if you already have it, well making this is going to be a breeze! Let's make some doenjang jjigae (된장찌개)! This classic Korean dish is traditionally uses rice water or dashi broth. I went for a more vegetarian approach and used aquafaba (chickpea water). This created a very nutty, deep riche flavor - it's super easy to make! The doenjang broth thickened quite easily and added to the overall umami flavor of the soy bean paste soup. Chickpeas are a great source of vegetable protein - it's very versatile and you can use it to substitute meat in a variety of meals! Hope this helps. Stay chic and healthy! -Harper Amazon Links Doenjang (Soybean) Paste: 🤍 Chickpeas: 🤍 [Ingredients] 1/2 onion 1/2 zucchini 1 jalapeno (optional) Mushrooms (handful) 3 scallions 1.5 cup aquafaba 1.5 cup water 2.5 tbsp doenjang (soybean paste) 1 tsp red pepper powder or flakes 1 pack silken tofu 1.5 tsp minced garlic Precook some chickpeas! 1 cup chickpeas + 2 cup water for 30min in instant pot! [Instructions] 1. Dice onion and zucchini. 2. Chop jalapeno into very tiny pieces. 3. Chop mushrooms into bite sized pieces. 4. Dice scallions into small pieces. 5. Begin to boil aquafaba and water in a pot. 6. Add doenjang to the pot and make sure it 100% dissolves into the liquid. 7. Once boiling, add onions. 8. Add red pepper powder to the pot and stir. 9. Then add the zucchini and mushrooms to the pot. 10. Remove water from silken tofu and add to the pot! Break it up as you wish. 11. Once the jjigae begins to boil again, add jalapeno and scallions. 12. Add minced garlic to the jjigae. For less garlic flavor, add the garlic in the beginning! 13. Taste the jjigae at this point in time.
